Matsutake

1. Matsutake
Matsutake (Tricholoma matsutake) atau jamur pinus adalah nama umum untuk jamur mikoriza langka dari genus Tricholoma famili Tricholomataceae. Di Jepang, matsutake adalah bahan makanan mewah yang berharga sangat mahal. Jamur ini memiliki wangi harum yang kuat dan dimakan setelah dipanggang sedikit di atas api, ditanak bersama beras menjadi nasi matsutake (matsutake gohan), dan sebagai campuran dobinmushi (sup dalam teko).

Hon-shimeji (Lyophyllum shimeji) adalah fungi yang sulit dikultivasi, namun telah banyak pabrik di Jepang yang membudidayakan jamur ini.
Nameko
3. Nameko
Pholiota nameko, dikenal dengan nama Nameko, adalah jamur kecil berwarna coklat yang biasa digunakan dalam campuran miso soup dan nabemono. Jamur ini merupakan jamur yang paling banyak dibudidayakan di Jepang.
